What’s with the Tumblr obsession with poutine lately? (Although I admit that it’s making me crave some.)
Also, the picture on the top left of this grid was obviously made with shredded mozzarella, and thus is not technically poutine, although I’d probably still eat it.
Shredded mozzarella is what I’ve been using, since I don’t generally have the time (or the budget) to go somewhere that actually carries cheese curds. Diced mozzarella would probably get you a better squeak, and I did that once (bought a package of small buffalo mozzarella balls packed in [water? oil? can’t remember] and quartered them), but I preferred the overall melt of the shredded cheese.
